Gracious Greek Salad

- 3 cups chopped romaine lettuce
- ¼ cup chopped cucumber
- ½ red bell pepper, diced
- ¼ cup chopped kalamata olives
- ¼ cup cherry tomatoes, halved
- 2 tablespoons capers, drained
- 2 tablespoons diced red onion
- ¼ cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon hemp seeds
- 2 garlic cloves
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- 2 teaspoons Dijon mustard
- 3 teaspoons maple syrup
- 2 tablespoons chopped parsley
- Put Salad ingredients in a large salad bowl.
- Blend dressing ingredients in a blender until cream and smooth. Pour over the salad and toss until well mixed.
