Easy and Delicious Roasted Rosemary String Beans

Ingredients
  • 1 lb string beans, trimmed and washed
  • 2 tbsp no salt added vegetable stock
  • 1 tbsp rosemary
  • 1 tsp date syrup or pure maple syrup
  • 1½ tsp nutritional yeast
  • 1 small garlic clove, minced
  • 1 tsp healthy oil like avocado (optional)
  • pinch onion powder
  • fresh black pepper, to taste
Instructions
  1. Preheat oven to 400 degrees F.
  2. Toss the beans with remaining ingredients in a medium-sized bowl.
  3. Place string beans on non-stick baking pan.
  4. Roast in oven for 15-20 minutes or until beans are tender and slightly browned in spots, turning once.
  5. Serve.
Notes
The addition of some dijon mustard is also great in this recipe.
