Pure Voice: Melissa Costello and The Clean in 14 Detox

Today I have an amazing book to share with you along with the fabulous author that wrote it. Plus her tips on how to find balance in the kitchen when embarking on a plant-based diet.

Melissa Costello, founder of Karma Chow has always had a passion for healthy, delicious food and nutrition. As a Nutritional Educator and Wellness Coach (NHI & Spencer Institute), Melissa works one on one with clients teaching them how to live a happier, healthier life through a plant-based, whole foods diet. She is the creator of The Vital Life 30-Day Food Based Cleanse, which has become popular among celebs in Hollywood as well as hundreds worldwide.

“Eating healthy can be a challenge for many, which is why it’s super important to make sure you plan your meals out each week. Health starts in your kitchen, and with what you put in your mouth. It does require a bit more thought at first, and possibly time, but once you get into the groove with planning your meals, shopping and cooking it will become second nature. It’s important to take small steps that are manageable within your schedule. Also, you can look at where you can prioritize more. Often I hear people tell me they don’t enough time to prepare meals, etc. and then when I probe a little deeper I find they are wasting multiple hours on social media and watching TV or browsing the internet every night. These are precious hours you can be using for self-care and meal planning.

It’s all about keeping your eye on the bigger picture, which for many is health. Your health is your true wealth, so with your eye on that, what will you do to make it a priority in your life? It’s time to re-assess and look at where you can make the time for this commitment. Start small, maybe pick one new recipe a week and begin there. The healthier you eat, the better you feel, and if that’s not enough motivation, I’m not quite sure what is.”

Great tips Melissa! We sometimes need to be reminded to focus on what is really important. One small change can get us closer or to our goal. Ask yourself what it is you REALLY want and make it happen.

Melissa’s book also includes mouthwatering mix-and-match meal plans for the 14 days. I am a sucker for salads in general and I LOVE Greek Salads, so of course I had to make this right away. Melissa’s recipe does not disappoint, the dressing is simple, but packed with flavor. It’s been a weekly staple over here since the first time I made it.

Gracious Greek Salad

Who doesn't love Greek salad? This dairy-free version is a delight and loaded with phytonutrients, fat dissolvers, and antioxidants.

Ingredients
Salad:
  • 3 cups chopped romaine lettuce
  • ¼ cup chopped cucumber
  • ½ red bell pepper, diced
  • ¼ cup chopped kalamata olives
  • ¼ cup cherry tomatoes, halved
  • 2 tablespoons capers, drained
  • 2 tablespoons diced red onion
Garlicky Greek Dressing:
  • ¼ cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon hemp seeds
  • 2 garlic cloves
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 2 teaspoons Dijon mustard
  • 3 teaspoons maple syrup
  • 2 tablespoons chopped parsley
Instructions
  1. Put Salad ingredients in a large salad bowl.
  2. Blend dressing ingredients in a blender until cream and smooth. Pour over the salad and toss until well mixed.

I love to make plant-based meals look beautiful. Some say you eat with your eyes, and this is a perfect example of what I am talking about. Who doesn’t love a show-stopping, gorgeous meal to make for yourself or for a get-together?

Portobello Stacker with Chipotle Cashew Cheese

This delicious entrée will make you feel as if you are eating a gourmet meal at a fancy restaurant. Even though it has simple ingredients, the health benefits are phenomenal.

Recipe type: entrée
Serves: 2
Ingredients
  • 2 large Portobello mushrooms, stems removed
  • 1 large zucchini, cut in half and sliced into ½-inch strips
Marinade:
  • 3 tablespoons extra virgin olive oil
  • 2 teaspoons maple syrup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Bragg's Liquid Aminos
  • 1 tablespoon apple cider vinegar
  • ¼ cup filtered water
  • 2 garlic cloves, minced
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon dried oregano
  • 2 teaspoons freshly chopped rosemary
Instructions
  1. Preheat oven to 400 degrees F. Place the mushrooms in a baking dish cap side down with the zucchini slices. Cut the bell pepper into strips and set aside.
  2. Whisk or blend together all the marinade ingredients in a large bowl and pour over the mushrooms and zucchini. Let sit for 10 minutes.
  3. Bake the mushrooms and zucchini in the oven for about 15 to 20 minutes or until soft and juicy. Remove from oven.
  4. To assemble the stackers, place one mushroom on a plate and spread a thin layer of the cashew cheese over the top. Add a few of the roasted bell pepper strips and a dollop of Chipotle Cashew Cheese. Finish off by topping the stack with several zucchini strips. Season with salt and pepper, if desired.

Chipotle Cashew Cheese

This vegan take on cheese sauce is delicious on just about everything. Cashews are high in magnesium and potassium, lending to your body's mineral balance.

Serves: 6-8
Ingredients
  • 1½ cups cashews, soaked in water for 1 hour
  • ¼ cup nutritional yeast flakes
  • 1 tablespoon lemon juice
  • ½ teaspoon chipotle chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon sea salt
  • ¼ teaspoon smoke paprika (optional)
  • filtered water
Instructions
  1. Drain the water from the cashews and place all the ingredients in a blender with just enough water to barely cover. Blende until very smooth. Add more water if the mixture is too thick or if you're having trouble blending the ingredients. This sauce should be fairly thick.

Spring Onion Farro Fritters with Fresh Peas, Apsaragus, Radish & Tahini-Mint Dressing

Today I am thrilled to be able to share this wonderful recipe with you! I created this recipe for the awesome editors of Eternity Watch Magazine to be featured in their Spring Issue. I absolutely love this recipe! It is whole-foods, plant-based and so delicious. I packed in as many fresh, in-season spring produce I could think of – I like my salads fully loaded. =) And if you are a salad lover like me, you with love this recipe as much as I do.

If you haven’t tried Farro yet, you are missing out on a wonderfully nutritious grain. It’s often used as a substitute for pasta or rice, farro is a grain with a nutty flavor similar to brown rice. It is rich in fiber, magnesium and vitamins A, B, C, and E.

I am definitely going to showcase this awesome grain in upcoming recipes. I decided to use Farro in this recipe because I thought it would be a nice change from using Quinoa. I love Quinoa, but I wanted something new for these fritters. Farro is not gluten-free. But if you are gluten-free and want to try this recipe, you can substitute the Farro for quinoa and sub the whole-wheat flour and panko with gluten-free options.

Key Lime Guacamole

Chunky Key Lime GuacamoleOne of the many things I love about my husband is that he is super thoughtful. My morning routine includes squeezing in that much needed exercise super early before my hectic day begins. If I don’t get that exercise in before 7 am, forget about it!! So, when I came up from our basement from doing my exercise this morning, it was so wonderful that my hubby had this flavorful guacamole waiting for me. Nothing like a healthy post-workout meal to make this busy mama happy and full!

Chunky Key Lime GuacamoleMatt – that’s my hubs – makes these wonderful slow cooked hash browns in a skillet almost everyday – don’t worry I will share – we top them with sautéed veggies and yummy salsas. This week he’s been making his signature guacamole to go along with it. He even surprised me with writing down the recipe! It’s the perfect recipe for this week because today is Cinco De Mayo. So, after I gobbled this down, I scrambled to take a photo of this wonderful dish so I can share it with you today. What better way to celebrate Cinco De Mayo than with a kick-ass recipe like this one!

This brightly colored guacamole is zesty and full of flavor. Serve it as an appetizer or as a condiment. It's also a wonderful addition to hash browns or baked potatoes.

Ingredients
  • 1 ripe avocado
  • 3 key limes, juiced
  • ½ tomato, diced
  • ¼ cup onion, diced
  • 5 pickled jalapenos, diced
  • ¼ cup pickled jalapeno juice (from the jar)
  • 3 tablespoons chopped cilantro
  • sea salt and freshly ground pepper, to taste
Instructions
  1. Cut the avocado in half, remove the pits, and scoop the flesh out of the shell with a small spoon into a medium-sized bowl. Mash the avocado with a fork, but keep chunky. Add the key lime juice, tomato, onion, pickled jalapenos, pickled jalapeno juice, chopped cilantro, salt, and pepper and toss well.
Notes
This recipe was created for a smaller serving, but can easily be doubled or tripled for a party.

Hearty Minestrone Soup

Hearth Minestrone Soup (Vegan)

I’m finding it hard to believe that Thanksgiving has come and gone! We had a wonderful, mellow Thanksgiving at our house, but we sure did eat a lot of rich foods. So, in order to lighten it up a bit in between Thanksgiving and Christmas, I am sharing this bowl of healthy deliciousness with you.

This soup is exactly what my family needed this week since everyone has come down with some variation of the same cold. Isn’t it interesting how a cold can manifest itself differently for each person? Well, we are on the mend thanks to this hearty minestrone soup. I hope it’s just what you need too!

This soup is hearty, filling and pairs nicely with a big green salad – as all soups should. You can also serve this with some warm crusty bread.

Hearty Minestrone Soup (vegan, oil-free)

Ingredients
  • 1 large onion, finely chopped
  • 4 cloves garlic, thinly sliced
  • ¾ cup celery, thinly sliced
  • 1 leek white and tender green parts only, thinly sliced
  • 2 cups Napa cabbage, chopped
  • ¼ cup dry sherry
  • 3 cups low sodium vegetable broth
  • 1 (14 oz) can diced tomatoes
  • 3 tbsp tomato paste
  • 2 bay leaves
  • ¾ cup canned red kidney beans, drained and rinsed
  • ¾ cup canned white northern beans, drained and rinsed
  • 1 cup cooked elbow noodles
  • no-salt seasoning of choice or sea salt and freshly ground pepper to taste
  • ½ cup flat-leaf parsley leaves, chopped
Instructions
  1. Heat a medium soup pot over medium-high heat. Add the diced onions and two tablespoons of vegetable stock and stir. Water sauté the onions, adding small of amounts of veggie stock when needed to prevent sticking, for 5 minutes or until translucent. Add the garlic, celery, leeks, cabbage and cook for an additional 2 minutes. Raise heat to high and add dry sherry, vegetable stock and diced tomatoes. Whisk in tomato paste and add bay leaves. Bring to a Boil. Cover and simmer on low-heat for 15 minutes.
  2. Stir in the beans and cover. Simmer for an additional 10 minutes.
  3. Remove bay leaves and stir in pasta noodles. Season with no-salt seasoning or sea salt and freshly ground pepper, to taste.
  4. Remove from heat. Ladle soup into bowls and garnish with freshly chopped parsley.
Notes
I only used 3 cups vegetable stock in this soup because I wanted it to be hearty. If you want more broth add an additional 1 cup of vegetable broth. You will need to add another tablespoon of tomato paste and adjust the seasonings a bit.

I adore simple soups like this that are done in a flash, especially when I have sick babies to heal and comfort. Soups like this always have a way of making everyone feel better.

Vegan Cream of Mushroom Soup

With the cool weather here and fall in full-bloom, my craving for warm and hearty soups is here. I made this soup and sat on my back deck basking in all the colors as the sun peaked through the leaves like fire. In Georgia you get the cool crisp falls with an extra added warmth from the sun which we didn’t get up north. I’m so glad I live in a world where there is fall and of course warm soups to enjoy. Just look at the beautiful colors that my hubby captured early one morning last week.

But, fall is over for a lot of you and it’s winding down here in Georgia. It’s snowing up North and a cold front is coming in here tonight! But I am holding on to the last hints of my favorite season with this post and this soup. This soup just looks like fall to me, but it  can also warm your stomach and your soul in the cold winter months to come. There are very few ingredients and it can whipped up in a short amount of time – who doesn’t love simplicity when it comes to cooking?

You can get all fancy with this soup and use different mushrooms if you want. I will definitely be doing this! This soup is great on its own, or with a half sandwich or a salad. You can add more vegetables to this soup or add some beans. It’s also a great base for a hearty casserole. I will be using this to make a vegan version of a traditional Thanksgiving side that I love – which of course I will share shortly. =)

A vegan cream of mushroom soup has been on my mind for some time – so here it is. =)

Vegan Cream of Mushroom Soup

Serves: 4
Ingredients
  • 16 oz button mushrooms
  • 2 cloves garlic, minced
  • 1 cup sweet onion, diced
  • ½ cup raw cashews, soaked in water for 4 hours
  • 4 cups vegetable stock, plus 2 tablespoons
  • ½ cup unsweetened non-dairy milk of choice (I used almond milk)
  • ½ cup white wine
  • 1 tsp dried thyme
  • 4 tbsp no-salt seasoning (I used Benson's Table Tasty)
  • 1 tablespoon flour
  • freshly ground black pepper, to taste
  • chopped fresh parsley, for garnish
  • ground paprika, for garnish
Instructions
  1. Heat a medium soup pot over medium-high heat. Add the diced onions and two tablespoons of vegetable stock and stir. Water saute the onions, adding small of amounts of veggie stock when needed to prevent sticking, for 5 minutes or until translucent. Add the garlic and cook for an additional 2 minutes. Add sliced mushrooms and cook for 5 minutes, stirring often. Add a little veggie stock if need, but the mushroom will add enough liquid you will probably not need to do this. Raise heat to high and add white wine, cook for five minutes stirring often.
  2. Add 4 cups of vegetable stock, dried thyme and no-salt seasoning to pot and stir. Cover and simmer on low-heat for 15 minutes.
  3. In a food processor or high-powered blender, puree soaked cashews (drained of water) and ½ cup unsweetened non-dairy milk of choice (I used almond milk). Add 1 cup of soup and puree until smooth and creamy. Slowly whisk in soup and cashew puree to the pot and stir.
  4. In a small bowl, add one tablespoon of flour. Whisk in 1-2 tablespoons of vegetable stock until smooth. Slowly whisk into soup and simmer for an additional 5 minutes or until desired thickness.
  5. Remove from heat and season with freshly ground pepper, to taste. Ladle soup into bowls and garnish with ground paprika and fresh chopped parsley.
Notes
There are many brands of no-salt seasonings, so you might have to adjust the amounts you are using. For example, Mr's Dash has a lot of pepper, so I would not use 4 tablespoons in this soup. Use your intuition and season to taste.

Thank you to Wendy over at Healthy Girl’s Kitchen for turning me on to Benson’s Table Tasty. It’s my new go-to and by far my favorite no-salt seasoning! Wendy has a great post on No-Salt Seasonings that I recommend checking out.

I added this note to the recipe, but I want to reiterate. There are many brands of no-salt seasonings, so you might have to adjust the amounts you are using for this soup. For example, Mr’s Dash has A LOT of pepper, so I would not use 4 tablespoons in this soup. Use your intuition peeps and season to taste. =)

This soup is my go-to recipe every year for Passover – it really is that good.

Her newest book Wild About Greens is amazing. I do a lot of my cooking/prep on Sundays so I don’t have to worry about eating healthy during the week. Having three kids is keeping me super busy nowadays and I need to make sure I have plenty of delicious sides on hand at all times. This way I can throw together quick, healthy lunches and dinners for my family.

This review is not complete without mentioning that the beautiful photographs in the book are by the lovely Susan Voisin from one of my favorite blogs Fat Free Vegan. Susan talks about the book and shares another recipe for Nava’s Three Potato Salad with Arugula. If you haven’t been to Susan blog – head on over there – it’s one of the best vegan blogs out there with tons and tons of delicious and creative recipes and information.

I have made several recipes from this book and haven’t been disappointed once. The White Bean & Greens Burgers are so hearty and tasty – great served with her Very Green Avocado-Tahini Dip and a big green salad. We really loved this recipe for Curried Sweet Potatoes with Chard & Chickpeas.

Curried Sweet Potatoes with Chard & Chickpeas

A superb fusion of flavors permeates this nourishing harvest dish. Serve it like a stew in shallow bowls, accompanied by warm flatbreads.

Recipe type: Main/Side
Serves: 4 to 6
Ingredients
  • 1 tablespoon olive oil
  • 2 to 3 cloves garlic, minced
  • 2 large sweet potatoes or 4 medium garnet yams, peeled and cut into large dice
  • 1 16- to 20-ounce can chickpeas, drained and rinsed
  • 1 16-ounce can diced tomatoes (such as fire roasted, a particularly flavorful variety)
  • 2 scallions, thinly sliced
  • 2 teaspoons good-quality curry powder, or more, to taste
  • 2 teaspoons minced fresh ginger, more or less to taste
  • 1 teaspoon ground cumin
  • 8 to 12 ounces chard, any variety, or a combination of chard and beet greens
  • ¼ cup chopped cilantro or parsley, or more or less, to taste
  • ¼ cup raisins, optional (but highly recommended)
  • Salt and freshly ground pepper to taste
Instructions
  1. Heat the oil in a large skillet or a stir-fry pan. Add the garlic and saute over low heat until golden.
  2. Add the sweet potato dice and about 1½ cups of water. Bring the mixture to a simmer and cook until the sweet potatoes are tender, adding just enough additional water, if needed, to keep the mixture moist as it cooks.
  3. Stir in the chickpeas, tomatoes, scallions, curry powder, ginger, and cumin and bring the mixture to a simmer again; cook over low heat for 10 minutes or so, until the tomatoes have been reduced to a sauce and the flavors have mingled.
  4. Meanwhile, strip or cut the chard leaves (and beet greens, if you're using them) away from the stems. Slice the stems thinly, and cut the leaves into strips.
  5. Add the chard to the skillet, in batches if necessary, and cover. Cook briefly, just until the chard wilts, and stir into the mixture. Cook over low heat for 5 minutes, or until the chard is tender but not overdone. Stir in the cilantro and optional raisins. Season with salt and pepper, then serve.
Notes
Variation Stemmed, coarsely chopped mustard greens or spinach or whole baby spinach leaves can be used in place of chard, using the same directions as for the chard. If you'd like to try kale or collard greens in this dish, I'd suggest steaming or stir-frying these greens before adding them to the dish in the last step. You can also vary the kind of beans in this recipe. Try black beans, red beans, or pinto beans.

Spinach Stuffed Mushrooms

I am not thrilled with the look of these mushrooms on camera, but I am thrilled with the taste. Can you even make stuffed mushrooms look camera-worthy? I love the flavor the little tomatoes add to the dish, but not loving that they got all wrinkly. 😉 But, if you like stuffed mushrooms as much as I do, these are a nice, easy appetizer to make. I added toasted pine nuts to this recipe, but thought they were a bit overpowering, so if you feel like adding them go for it or skip it all together. Skipping them will definitely cut the fat content if that’s what you’re looking for. =) I added a little balsamic vinegar that added a hint of sweetness, but also made the spinach turn into more brown than green. Oh well, still yummy!

These little treats are inspired by my fabulous neighbor Helen and her mother-in-law. They made a similar stuffed mushrooms appetizer for a get-together we attended, but theirs included feta. Thanks for the inspiration and if you are reading this there are leftovers in the fridge, I know you love to sample my treats. =)

Okay, so here’s the recipe and if you try these out, please let me know what you think. I will however be making these again and again until they are perfect and shine on camera!

Easy Appetizer: Spinach Stuffed Mushrooms

Serves: 6-8
Ingredients
  • 16 large button mushrooms, stems removed (reserve stems) and caps left intake
  • 1 garlic clove, minced
  • ½ cup mushroom stems, finely chopped
  • ½ cup vidalia onion, diced
  • ½ cup roasted red pepper, diced
  • 2 tbsp. toasted pine nuts (optional)
  • 1 (10 oz) package frozen spinach, thawed and squeezed of excess water
  • 1½ tsp. balsamic vinegar
  • Cherry tomatoes, halfed
  • Black pepper to taste
  • no salt added vegetable stock for sautéing
Instructions
  1. Preheat oven to 375 degrees F.
  2. Heat a medium non-stick skillet over medium-high heat.
  3. Add mushroom stems, onions, garlic and 1 tbsp of veggie stock. Cook 8 to 10 minutes, stirring occasionally, until sofetened, adding small amounts of veggie stock to prevent sticking.
  4. Meanwhile, heat a small non-stick skillet over medium-low heat. Add pine nuts and toast, shaking often to prevent burning. Remove pine nuts when lightly browned from pan and set aside.
  5. Stir in spinach, roasted red peppers, toasted pine nuts, balsamic vinegar and black pepper to taste. Heat for an additional 2 minutes.
  6. Arrange mushroom caps on a non-stick baking pan or a baking dish. Divide filling evenly between mushrooms, rounding top with a spoon. Add half of a cherry tomato to each mushroom cap.
  7. Bake for 20-25 minutes, or until softened and juicy.
  8. Serve immediately. Enjoy!

Vegan Holiday Kitchen Giveaway and Vegan Matzo Ball Soup

I know, it’s been the month of Giveaways, but I had the pleasure of receiving several complimentary copies of vegan cookbooks and couldn’t resist checking these amazing cookbooks out and sharing some wonderful recipes with you.

Up next is the fabulous Vegan Holiday Kitchen from Nava Atlas. Trust, me you are going to want to enter to win this fabulous cookbook. I made her Vegan Matzo Ball soup and I was overjoyed with the result. This is one recipe that was on my list to veganize, but I was a little wary of doing this. I mean I have in my memory traditional Mom-made perfect Matzo Ball Soup and wasn’t sure if I could ever recreate it vegan. Boy, was I wrong! Seriously, the only difference is removing the chicken broth, all the flavors are there from the vegetables, seasonings and fresh dill. Nava took care of the matzo balls falling apart with out the use of eggs by using quinoa flakes as a binder and it worked perfectly. This is a no-fail recipe and unbelievably delicious, my family absolutely loved it. Nava, thanks for this wonderful recipe, you nailed this one. =)

Simple Vegetable Soup with Vegan Matzo Balls – Gluten-free (by omitting matzo balls), soy-free, nut-free

Vegetable Soup

8 Servings

This soup served at traditional Passover seders is very much akin to this one, except that’s made with chicken broth. In truth, the Passover soup course functions primarily as a venue for the matzo balls

Ingredients:

2 tablespoons olive oil or other healthy vegetable oil

1 large onion, finely chopped

3 celery stalks, diced

1 32-ounce carton vegetable broth

6 medium potatoes, peeled and finely diced

6 to 8 medium carrots, sliced

Handful of celery leaves

1 tablespoon all-purpose seasoning blend, or use a Kosher for Passover brand

1/4 cup chopped fresh dill, or to taste

Salt and freshly ground black pepper to taste

Vegan Matzo Balls (recipe follows)

Directions:

  1. Heat olive oil in a large soup pot. Add the onion and celery and sauté over medium heat until golden
  2. Add the broth, potato, carrots, celery leaves, seasoning blend, and 2 cups water. Bring to a rapid simmer, then cover and simmer gently for 15 to 20 minutes, or until the vegetables are tender.
  3. Stir in the dill, then season with salt and pepper. If time allows, let the soup stand for several hours off the heat to develop flavor. It can also be made a day in advance.
  4. Just before serving, bring to a simmer. Adjust consistency with more water if needed be, and taste to adjust seasonings. Add warmed matzo balls to individual servings of soup.

Vegan Matzo Balls – soy-free, nut-free, can be made Gluten-free using gluten-free option

Makes about 24

Ingredients:

1 cup quinoa flakes

2 cups boiling water

1 cup matzo meal (see gluten-free variation, below)

1/4 cup light vegetable oil (such as safflower)

1/4 teaspoon salt

A few grindings of black pepper

Pinch of onion and garlic powder, optional

Directions:

  1. In a large mixing bowl, cover quinoa flakes with the water. Let stand for 2 or 3 minutes.
  2. Stir in the matzo meal along with the oil, and mix until well blended. Cover the bowl and refrigerate for at least 15 minutes.
  3. Just before baking, preheat the oven to 275 degrees F.
  4. Roll the matzo meal mixture into approximately 1 -inch balls; don’t pack them too firmly. Arrange on a parchment-lined baking sheet.
  5. Bake for 20-25 minutes, carefully turning matzo balls after 10 minutes, until firm to the touch; don’t let them brown.
  6. If making ahead of time, let the matzo balls cool completely. then cover until needed. Warm them briefly in a medium oven and distribute them among the soup bowls, allowing 3 or 4 matzo balls per serving.

Variation: to make these gluten-free, substitute 1 1/4 cups quinoa flakes for the matzo meal. Don’t add them to the original quantity of quinoa flakes; this is a  separate measure to use dry. A bit more is needed than the quantity of matzo meal for the purpose, as the quinoa flakes are less dense.

I had the pleasure of receiving this amazing cookbook for review. I couldn’t resist getting my hands on a book with 750 Appetizers to chose from. Yeah, it’s not all vegan, but if your household is like mine – my husband still eats meat on occasion – there are multiple recipes to suit every dietary preference. This cookbook does include tons of vegetarian and vegan friendly recipes like those beautiful spring rolls above. How can you go wrong with all those fresh ingredients and aren’t they beautiful to look at? I made these rolls and they were gone in a matter of minutes they were so yummy. I can’t wait to serve this recipe up to guests.

This is almost a two‑for-one recipe —the fresh rolls are wonderful all on their own but the leftover marinade creates the perfect dipping sauce.

Ingredients
  • Dressing
  • 2 tbsp soy sauce 30 mL
  • 2 tbsp sweet Asian chili sauce 30 mL
  • 1⁄2 tsp toasted sesame oil 2 mL
  • 1⁄2 tsp rice vinegar (see Tips) 2 mL
  • 1⁄2 tsp minced garlic 2 mL
  • 1⁄2 tsp finely chopped pickled ginger 2 mL
  • 1⁄4 tsp minced gingerroot 1 mL
  • 2 cups shredded baby bok choy 500 mL
  • 3⁄4 cup julienned blanched asparagus 175 mL
  • (see Tips, left)
  • 3⁄4 cup julienned peeled carrots 175 mL
  • 1⁄2 cup julienned English cucumber 125 mL
  • 1⁄4 cup julienned mango 60 mL
  • 1⁄4 cup finely chopped toasted peanuts 60 mL
  • 8 10-inch (25 cm) rice paper wrappers 8
  • 3 cups hot water 750 mL
  • Dipping sauce, optional (see Tips)
Instructions
  1. Dressing: In a bowl, combine soy sauce, chili sauce, oil, vinegar, garlic, pickled ginger and minced ginger.
  2. In another bowl, combine bok choy, asparagus, carrots, cucumber, mango and peanuts. Add 2 tbsp (30 mL) dressing and toss well. Divide into 8 equal portions.
  3. Working with one rice paper at a time, submerse in hot water until pliable, about 30 seconds. Place on a work surface. Spread one-portion of the vegetable mixture in a strip across the lettuce leaf about one-third away from the edge closest to you, leaving about 1 inch (2.5 cm) on either side. Fold the edge closest to you over the filling and pull gently toward you to encase the filling. Fold the sides toward the middle, then continue to roll up tightly. Place rolls under a damp cloth to stay moist because the wrappers tend to dry out quickly. Serve rolls immediately with dipping sauce, if using, or refrigerate for up to 1 hour. Serve whole or for a small hors d’oeuvre, cut in half on the diagonal and place on a serving platter.
Notes
Tips To julienne asparagus, cut into thin slices lengthwise and slice those slices into thin strips. For a wonderful dipping sauce, in a small ramekin, combine the remaining dressing with 1⁄4 cup (60 mL) soy sauce and 1 tbsp (15 mL) coarsely chopped Agave and Ginger-Scented Peanuts (page 455).
